Tahu telor or tahu telur is an Indonesian tofu omelette presented as a high “tower” of crispness with a spicy and creamy sauce. What is the origin of tahu telor? Tahu telor is a variation of a well known Indonesian dish called tahu goreng. This dish, which is more of a generic term, represents any kind of fried tofu preparation served not only in Indonesia, but also in Malaysia and Singapore. In Indonesian and Malay, tahu or tauhu means “tofu” and goreng means “fried”. Tofu originated in China and was brought to Southeast Asia by Chinese immigrants to the region. Asian cultures are important consumers of fried tofu, making it possible for this soy-based food to find its place in different Western vegetarian diets. Different versions of tahu goreng There are many ways tahu goreng is prepared all over Indonesia. These variants tend to be served with different traditional sauces such as sambal kecap this hot condiment is prepared with a base of sweet soy sauce, chilli peppers and shallots, or even peanut sauce with chilli. Some of the popular variants of this fried tofu dish are Tahu isi it’s mainly composed of tofu filled with bean sprouts, carrots and sometimes even meat. It is then battered and deep fried. Tahu campur this name literally means “mixed tofu”. It is prepared with beef slices, vegetables, beansprouts, rice vermicelli and served in a thin broth. This dish is very popular in the region of East Java. Tahu gejrot fried tofu in hot sweet and sour sauce. It is served with chilli and shallots, very popular in West Java. Tahu gunting this means tofu cut with scissors. It is mainly fried tofu in thick sweet and spicy peanut sauce. Kupat tahu these are ketupat rice cakes, beansprouts, served in thick sweet and spicy peanut sauce, common throughout Java. Tahu bulat or tahu bola also called bola-bola tahu tofu balls. This is a relatively new variant of fried tofu from Tasikmalaya. The tofu is mixed with seasoning and shaped in balls or rounded form, and later deep-fried in cooking oil. Tahu telur this version, originated from Surabaya city in East Java, is the one presented in this recipe. How to make tahu telor The tofu that is used for this appetizer is silken tofu for its soft and creamy texture. It is different from the one used for dolsot bibimbap that is extra firm tofu, more suitable for this kind of dish where the tofu is fried and must remain firm and in one piece after frying. Some tahu telor recipes feature small and flat omelettes, although the traditional version is the vertical version. To fry an omelette so that the result is not flat, people often use a can of condensed milk. First, the can has to be opened and the content poured into a container. Then the can must be washed in order to peel off the label, and cut on the other side so as to obtain a circle or ring of metal. This circle will be plunged into the frying oil and used to give some height to the tahu telor.
